Vegan Taquitos Recipe Ingredients

These vegan taquitos are filled with wholesome veggies and spices such as red onion, corn, zucchini, beans, and tomatoes. Spices included in the filling give a wonderful flavor because of the combination of oregano, garlic powder, onion and paprika. Sriracha sauce tops off the vegan taquito recipe.

How to Make Vegan Taquitos

Cook the veggie filling: diced onion, corn, zucchini, beans and cherry tomatoes in a non-stick frying pan with the olive oil over medium heat for 5 minutes

Stir in the spices: salt and pepper to taste,  add the dried oregano, garlic powder, onion powder, smoked paprika, tomato sauce and sriracha to the mix.

Cook for about 10-15 minutes until the juices evaporates and everything is combined and mixed.

Add the filling into the tortillas and roll them up to make the vegan taquitos ready for baking.

Place the tray of taquitos In an pre-heated oven at 350 degrees bake for about 10-15 minutes.

Ingredients

  • 6 flour tortillas
  • 2 tablespoons olive oil
  • 1 small red onion diced
  • 1 cup corn
  • 1 small zucchini diced into cubes
  • 7 oz. canned beans washed and drained
  • 5 oz. cherry tomatoes halved
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ cup tomato sauce
  • 1 tablespoon sriracha

Instructions

  • In a nonstick frying pan over medium heat place in the olive oil and start cooking the diced onion, corn, zucchini, beans and cherry tomatoes.
  • After 5 minutes stir in the salt and pepper to taste, dried oregano, garlic powder, onion powder, smoked paprika, tomato sauce and sriracha.
  • Cook for about 10-15 minutes until the juices evaporates and everything is combined and mixed.
  • Add some of the filling into the tortillas and roll them like taquitos into a roll.
  • Arrange them on a baking trey lined with a piece of parchment paper and bake for about 10-15 minutes in an already heated 350 F or 180 C degrees oven.
  • Serve with a drizzle of sriracha and ketchup.
